Polish-Style Sausage & Tofu "Dumpling" Stew

Ingredients
- 1 large Polish sausage (kiełbasa), sliced into 1cm rounds
- 200g firm tofu, pressed and cut into 2cm cubes
- 1 small cauliflower, cut into bite-sized florets
- 300g new potatoes, halved
- 2 sticks celery, finely chopped
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- 500ml chicken or vegetable stock
- 1 tsp smoked paprika
- 1 tbsp vegetable oil
- Salt and pepper
Method
- Heat 1 tbsp oil and fry 1 large sliced Polish sausage for 3–4 mins until browned.
- Add 2 sticks finely chopped celery and 1 diced onion, then sauté for 5 mins.
- Stir in 2 minced garlic cloves and 1 tsp smoked paprika for 1 min.
- Add 200g cubed tofu and 300g halved new potatoes, tossing for 2 mins to coat.
- Pour in 500ml stock, bring to a boil, then simmer covered for 10 mins.
- Add cauliflower florets, then cover and simmer for 10–12 mins until potatoes and cauliflower are tender.
- Season with salt and pepper and serve.
